Ingredients

  • 2 cups fresh pineapple chunks ripe and fragrant
  • 1/2 cup fresh mint leaves bright green and aromatic
  • 1 tablespoon lime juice adds brightness
  • 1-2 teaspoons honey optional, for extra sweetness
  • 1/2 cup water or coconut water keep cold for blending

Equipment

  • Blender
  • Popsicle molds
  • Sticks
  • Knife

Method

  1. Gather your ingredients: fresh pineapple, mint leaves, lime juice, honey (if using), and cold water or coconut water.
  2. Cut the pineapple into manageable 1-inch chunks and place them into your blender.
  3. Add a generous handful of fresh mint leaves to the blender—more if you love the herb’s punch.
  4. Pour in the water or coconut water, which helps the mixture blend smoothly.
  5. Blend everything on high for about 30 seconds until the mixture is silky and bright yellow with a fragrant mint aroma.
  6. Open the lid, taste the mixture, and add lime juice or honey if you'd like a bit more zing or sweetness. Blend briefly to combine.
  7. Pour the vibrant mixture into your popsicle molds, leaving about a quarter-inch space at the top to allow for expansion.
  8. Insert sticks into each mold, making sure they stand upright, and carefully place the molds into the freezer.
  9. Freeze for at least 4 hours, preferably overnight, until the popsicles are firm and glossy.
  10. To serve, run warm water over the outside of each mold for about 10 seconds to loosen, then gently pull out the popsicles.
  11. Enjoy immediately for the best texture—these popsicles are bursting with tropical flavor and a refreshing mint kick.

Notes

For an adult twist, add a splash of rum before freezing. Use ripe pineapple for maximum sweetness and vibrant color. Running warm water over molds makes unmolding easier and prevents cracking.
