- Gather your ingredients: fresh pineapple, mint leaves, lime juice, honey (if using), and cold water or coconut water.
- Cut the pineapple into manageable 1-inch chunks and place them into your blender.
- Add a generous handful of fresh mint leaves to the blender—more if you love the herb’s punch.
- Pour in the water or coconut water, which helps the mixture blend smoothly.
- Blend everything on high for about 30 seconds until the mixture is silky and bright yellow with a fragrant mint aroma.
- Open the lid, taste the mixture, and add lime juice or honey if you'd like a bit more zing or sweetness. Blend briefly to combine.
- Pour the vibrant mixture into your popsicle molds, leaving about a quarter-inch space at the top to allow for expansion.
- Insert sticks into each mold, making sure they stand upright, and carefully place the molds into the freezer.
- Freeze for at least 4 hours, preferably overnight, until the popsicles are firm and glossy.
- To serve, run warm water over the outside of each mold for about 10 seconds to loosen, then gently pull out the popsicles.
- Enjoy immediately for the best texture—these popsicles are bursting with tropical flavor and a refreshing mint kick.
Notes
For an adult twist, add a splash of rum before freezing. Use ripe pineapple for maximum sweetness and vibrant color. Running warm water over molds makes unmolding easier and prevents cracking.
